Stabilizer, prevents renewed fermentation, use 1/2 teaspoon per gallon
before back-sweetening. Also, use in conjuncture with potassium
metabisulphite. If used alone, potassium sorbate can cause a geranium
reaction, making your wine smell and taste like geraniums, yuck!
Potassium metabisulphite counteracts that reaction, and is also a
preservative!
